Finally I managed to create a fantastic recipe for croissants. Of course, I recommend it since it took me several weeks to finish the recipe. If they were not good I would never advertise them. Just try the recipe. But if you decide not to follow it thoroughly, I am afraid the final effect might differ. Good luck!

INGREDIENTS:

  • 50 g soft butter
  • 200 g of Mix B Schär flour
  • 2 eggs
  • 1 tablespoon of powdered sugar – 7 g
  • Yeast: blend 50 g warm milk + half a teaspoon of sugar + 13 g of yeast

PREPARATION:

  1. Pour half a teaspoon of sugar and yeast into a dish with warm milk. Blend, cover with a cloth and set aside in a warm place for 15 minutes to rise.
  2. Rub the soft butter with the flour.
  3. Whisk the egg with powdered sugar, add it to the flour with butter. Pour the yeast. Knead the dough until it is smooth. Put into a bowl, cover with clingfilm and put in the fridge for 1 hour or in the freezer for 20 minutes.
  4. Preheat the oven to 200ᵒC. Form 2 balls from the dough. Roll out, sprinkling lightly with flour. Cut each cake into 8 “triangles” as you slice a pizza. Put a jam on each triangle in its wider section. Roll from the broad end to form croissants.
  5. Brush croissants with egg yolks and sprinkle with your favorite toppings.
  6. Put them on a baking tray lined with baking paper. Bake for about 15 minutes. Sprinkle with powdered sugar.
