Very simple and proven recipe for delightful dumplings.

Ingredients for the dough:

  • 400g flour Mehl Farine Schär
  • hot water
  • pinch of salt.

Ingredients for filling:

  • 150g boiled potatoes, pressed,
  • 150g of cottage cheese,
  • 60g/1 large onion
  • 1 tablespoon of oil,
  • salt
  • pepper

Preparation of filling:

Peel potatoes and cook in salted boiling water. Strain and press them through the potatopress or pestle. Leave to cool completely. Meanwhile, cut the onion into cubes and fry with one spoon of oil until it’s gold. Add the glazed onion and the minced cheese to the potatoes. Season with salt and pepper and blend thoroughly.

Preparation of dumplings:

Put into the bowl 350 g of flour, salt and so hot but not boiling water to make the dough. Add water gradually and check the consistency obtained. Put the dough onto the table sprinkled with flour and keep adding flour until you get consistency of the dumpling dough. Divide he dough in two parts – roll one out and cover  the another part with a cloth so it does not dry up. When the dough is compact and flexible, cut it in half. Put one part on the board, sprinkled with flour, leave the other in a bowl covered with a cloth. Roll out the dough so it is few milimeters thick. Using a glass cut the circles from the dough. Place a small spoonful of the filling into the center of each round. Moisten the edges with water, fold over, and press together with a fork to seal. Keep dumplings covered with a kitchen cloth so that they do not dry out. Cook them in salted boiling water about 1 minute. Serve with a fried onion.
